Typically, you will take the written portion first, and if successful, you must book your practical exam within one year.
The multiple-choice exam consists of approximately 130 questions covering key areas such as:
- Soups, stocks, and sauces
- Produce
- Pasta, pulses, grains, and nuts
- Meat, poultry, and game
- Fish and shellfish
- Garde manger
- Dairy and eggs
- Baked goods and desserts
While these questions may challenge you, if you have a strong understanding of how and why ingredients, processes, and methods work, you should feel confident about the exam after studying.
For the practical portion, there are no real surprises. You will receive your menu in advance, allowing you to plan everything—right down to the minute if you prefer. The exam takes place in culinary school kitchens: these kitchens are well-equipped and designed for shared use. You will bring some of your own small tools and knives, but all food products will be covered by your exam fee.
During the exam, be sure to meet the required timing points, follow all food safety regulations, and maintain a tidy workstation. Additionally, minimizing food waste is essential. The marking is fair and transparent – you will know the grading criteria in advance. Interestingly, you are primarily graded on your final product rather than the process you used to achieve it. This means that you don’t have to worry as much about your personal techniques and methods.
